Nutritional Effects of Adding Quinoa to Bread: A Systematic Review

Context: Considering the importance of bread as a staple food in many countries around world, including Iran, Objectives: This study aimed to assess nutritional values (i.e., protein content, fat carbohydrates, vitamins, minerals, and antioxidant activity) quinoa-wheat compared simple wheat bread. Methods: A search was conducted electronic databases, PubMed, Scopus, Web Science, well Google Scholar engine. After screening title full-text articles, data were extracted by two independent researchers; third researcher interfered case disagreement. Keywords, “Chenopodium quinoa”, “Quinoa”, “bread”, obtained from MeSh database manuscripts related articles. All papers written English language, which published before March 2022, selected for this review. Results: Among 159 initially 38 titles removing duplicates irrelevant papers.
